Recipe: Shrimp Scampi

I think this white wine we are tasting on Friday will pair perfectly with a shrimp dish. Here is one that is pretty easy to make (25 minutes or so) and absolutely delicious!


Ingredients

  • 2 Tablespoons oil (olive oil recommended, but whatever you prefer would work)

  • 4 tablespoons butter

  • 1 1/2 tablespoons minced garlic (if you mince your own, you'll probably need 4-5 cloves)

  • 1 1/4 pounds large shrimp (I prefer to shell the shrimp and remove the tails before cooking)

  • 1/4 cup dry white wine (I'd use chardonnay)

  • 2 tablespoons lemon juice

  • Salt and pepper (to taste)

  • Crushed red pepper flakes (to taste)

  • 1/4 cup chopped parsley (for garnish)

  • 1 box of your favorite pasta (linguine is traditional, but anything you like would work)


Instructions

  1. Prepare your pasta according to the directions on the box.

  2. While the pasta is cooking, heat the oil and 2 butter in a large skillet.

  3. Add the minced garlic and sauté until you can smell it (usually 30 seconds - 1 minute).

  4. Add the shrimp

  5. Season with salt, pepper, and chili flakes to taste

  6. Add the wine and bring to a simmer for about 1-2 minutes

  7. Sauté for 1-2 minutes on each side. You want to cook them until they are just beginning to turn pink, then flip the immediately ( you really don't want to overcook shrimp).

  8. Remove from the heat

  9. Stir in the lemon juice and parsley.

  10. Serve over your pasta
