Recipe: Grilled Stuffed Olives

We are trying two Spanish wines this week, so why not pair them with some home made tapas like this easy recipe from our friend Steph!


Ingredients

  • 24 Large, pitted Green olives (remove the pimento if those are what you find)

  • 1/3 pound Manchego cheese

  • 1/2 Shallot minced

  • 2 cloves Garlic, minced

  • Fresh rosemary

  • Fresh thyme

  • 1/4 tsp sugar

  • 1/4 tsp paprika (smoked if you have it)

  • 1/4 tsp black pepper

  • 1 Tbl Worchestershire sauce

  • 1 Tbl sherry vinegar

  • 2 Tbl olive oil


Directions

  1. Put Manchego, shallot, garlic, herbs & spices in a food processor, and pulse until they

  2. Combine Worchestershire sauce, vinegar & olive oil in a bowl

  3. Stuff olives with cheese mixture, then skewer 3 together on a toothpick

  4. Marinate stuffed olives in the liquid mixture

  5. Grill on foil over high heat until the cheese just begins to melt

  6. Serve with fresh sliced baguette & Jamon Serrano or Spanish Chorizo

  7. Drink Spanish wine!
