Recipe: Fish Tacos
Another great dish to pair with your white wine is fish tacos. Here is a simple recipe to throw together.
Ingredients
3 tbsp. extra virgin olive oil
1 lime, juiced
2 tsp. chili powder
1 tsp. paprika
1/2 tsp. ground cumin
1/2 tsp. cayenne pepper
1 1/2 lb. flaky white fish (like cod or mahi mahi)
Salt- to taste
Black pepper- to taste
corn tortillas
diced avocado
Lime wedges
Sour cream
Chunky salsa
1/4 c. mayonnaise
Juice of 1 lime
2 tbsp. freshly chopped cilantro
1 tbsp. honey
2 c. shredded cabbage (the slaw kits you can buy at the grocery store work great too)
1 c. corn kernels
1 jalapeño, minced
Directions
In a medium shallow bowl, whisk together olive oil, lime juice, paprika, chili powder, cumin, and cayenne.
Place white fish into the sauce until it is covered and evenly coated.
Let marinate 15 minutes.
While the fish marinates, in a large bowl, whisk together mayonnaise, lime juice, cilantro, and honey.
Add cabbage, corn, and jalapeño.
Season with salt and pepper to taste
In a large nonstick skillet over medium-high heat, heat your favorite oil.
Move fish from marinade and season with salt and pepper.
Place fish into skillet flesh side-down. Cook 3 to 5 minutes per side.
Let cool 5 minutes before flaking with a fork.
Serve fish over grilled tortillas with corn slaw.
Squeeze on lime juice, and garnish with your choice of avocado, sour cream, and/or chunky salsa.
