Recipe: Blue Cheese Butter for Steaks

Nothing pairs better with a glass of red wine than a grilled steak. Next time you fire up the grill, try making this butter to give your steaks something extra. I’d make this recipe with a T-Bone if it were me, but it would also be great on a filet!


Ingredients

  • 1 stick unsalted butter, slightly softened

  • 1/4 cup crumbled blue cheese

  • 2 tsp finely chopped fresh thyme

  • Salt

  • Black pepper

Directions

  1. Start the grill and set to a high heat.

  2. Mix the butter, cheese, and thyme in a bowl and season with salt and pepper, to taste.

  3. Cover the bowl and refrigerate for 30 minutes.

  4. Grill steaks to a medium-rare doneness (130-135 internal temperature)

  5. Transfer the steaks to a plate

  6. Top them with some of the butter and let them cool for 5 minutes before serving.
